The combination of Blackberry and thyme with gin is incredible, the tart berries with herbaceous. fragrant thyme pairs so well with gin botanicals.
Perfect for Aperitivo hour, romantic date night or to make by the pitcher for a night in with friends.
Goes perfectly as a part of my Valentine's Day/ Date Night Menu with a side of Canapes (Onion & Plum Jam with Comte)
Serves 2
Ingredients
Syrup
Blackberries 175g
Sugar 100g
Lemon Thyme 4-5 sprigs
Water 250ml
Gin Fizz
Gin 60ml
Lemon juice 15ml
Blackberry Thyme Syrup 30 ml
Sparkling Water or Sparkling Wine to to top up
Ice
Garnish: Edible flowers, blackberries, and or thyme sprigs.
Method:
SYRUP
Bring all ingredients to a boil, simmer for 10 mins. Take off the heat. If you have the time leave it to steep in the fridge overnight.
Strain and use for cocktails or iced tea.
Reserve the fruit to top ice cream, yogurt, oats or whatever takes your fancy. Make agua fresca with lime. Waste nothing!
Gin Fizz
Fill the glass with ice. Add some more ice, gin, lemon juice and syrup into a cocktail shaker. Shake, strain into prepared glasses, top with sparkling.
The syrup can be made up to a week in advance. This recipe makes more syrup than you need, depends on how much you drink . Use leftover for iced teas or to make Blackberry Sours
